The grapes come from a 12 year old trellised vineyard on the lower part of the farm. The soil is mainly sandstone layered with a clay-shale which adds a unique element to this heritage varietal.
Grapes are whole bunch pressed to ensure elegant extraction. Natural fermentation took place in 500L French (5% new) and Hungarian (5% new) oak barrels. Part of the wine was also fermented in a French oak foudre (2000L). The wine was aged for 10 months on the lees contributing to the richness and texture of the wine.
